The Mojito has long been associated with Havana’s postcard-perfect beaches, making it the ultimate travel cocktail. The sweet hit of sugar, the subtle splash of citrus, the rich kick of rum, and the herbaceous aroma of mint all combine to deliver something that many would call summer in a glass.

It’s easy to change the base flavour of this drink by taking out the mint and leaning into the fruitier elements – a fruit liqueur or flavoured soda will do the trick. Or you can swap out the spirit to push it in a new direction. Make a close Mexican relative of the Mojito by trading the rum for tequila, or use a non-alcoholic spirit to create an authentic-tasting mocktail.

Ingredients

  • 45ml Bacardi Carta Blanca Rum
  • 2 tsp Caster Sugar
  • 10 mint leaves
  • 1/2 fresh limes
  • Soda water, to top

Method

  1. Cut 1/2 a lime and place in glass
  2. Add 2 tsp of caster sugar and muddle
  3. Add 10 torn mint leaves
  4. Add 45ml Bacardi Carta Blanca and ice
  5. Top with soda water
  6. Garish with mint
